Kita's Infamous Butter Chicken

Let me start off with my apologies... life has been a little hectic for me between wrapping up a project for work and just life in general. So I haven't had much time to give to the blog... However, I am back now with my infamous butter chicken recipe!!! See below :)


You’ll need the following:
Chicken breast cut up into cubes (I used 3 chicken breasts)
1 Whole green bell pepper chopped up into cubes
1/2 Red bell pepper chopped up into cubes
1 Red onion finely diced
3 Cloves garlic finely diced
2 Serrano peppers chopped
1 Tomato finely chopped
2 Tablespoons fresh ginger (you can use ginger paste as well - I go based on what I have in the house)
1 Cup heavy cream
2 Small cans of tomato paste
Cumin Seeds (Jeeru)
Cumin Powder (Dhana Jeeru)
Garam Masala
Turmeric (Urdhur)
Salt
Shaan butter chicken masala
6 tablespoons of butter
Cilantro
Rice
Parathas
Instructions:
Season the chicken with Shaan Butter Chicken Masala (you can find this at your local indian store). Heat a large skillet or medium saucepan and 2 tsp of oil and cook the chicken (the chicken does not fully need to be cooked). Chop it up into cubes and leave it to the side.
In another saucepan add 4 tablespoons butter over medium heat. Once the butter is melted and becomes hot add in cumin seeds, garlic, ginger & serrano peppers and then stir together.
Add in the onions and let them become soft - stir while doing this
Once the onions have softened add in the chopped green and red bell peppers let the peppers soften a bit
Once the peppers start to soften add in the tomato & add in 1 tsp of cumin powder (dhana jeeru), 1 tsp turmeric, 1.5 tsp garam masala and 2 tsp salt & mix together
Add in the chicken and mix well
Add in the tomato paste both cans and mix well together & add in the heavy cream (use 1 cup at first) see if you like the thickness and consistency and then determine if you want to add more or not
Taste to make sure it all taste good add salt & Shaan butter chicken masala as you see fit
Top with the remaining 2 tablespoons of butter and garnish with cilantro
Serve with parathas (I get the frozen ones from Patel Brothers) and or serve with rice
